How we Test
How did we go about testing all these pans? Each one had to pass a set of strict criteria to make it on our list. After all, it isn’t just about how well each one can release a fried egg.
Heat Distribution
We found pancakes to be the best test for heat distribution, as you can clearly see uneven spots on the surface of the pancake. To give each pan a fair go, we tested three pancakes in total on each one.
- First we began by measuring the levelness of our stove to ensure a flat surface.
- Then we preheated each pan for around three minutes.
- Before pouring the batter, we placed a thin layer of butter before cooking, as this is recommended by each brand in order to protect the non-stick coating overtime.
- Cooking lasted two minutes per side of the pancake.
Once removed, we took note of any uneven areas, like undercooked edges or overcooked centres. The pans with the most evenly cooked pancakes made it on the list.
Food Release Abilities
Even though each brand recommends using a small amount of oil or butter before cooking each time, we decided to test each one with and without oiling first. We decided to cook eggs for this test since they’re the best way to rank performance in terms of food release. Just like the pancakes, we used three eggs for each pan.
- Preheating took around three minutes each.
- After letting the eggs cook for five minutes, we attempted to let them slide right onto the plate without using any utensils.
Only the pans that let each egg slide off without help made it onto our list. Other models left egg residue behind, or the underside of the egg completely came off.
Scratching
It isn’t recommended to use any type of metal utensil or scouring pad on non-stick models, but we did a short test to see if any of them couldn’t even handle a few swipes.
- To test durability during cooking, we took a metal spatula and pulled it across the surface 15 times, ensuring to move in back-and-forth motions like you might do while mixing something.
- Then we tested using metal while cleaning. We took a scouring pad and scraped it across 10 times (less than the spatula since scouring pads are much coarser).
- Testing their durability against steel pans is also important, as many people store their cookware on top of each other. For this, we took a steel pot, put its base on top of the interior of the pans, and dragged them from edge to edge.
The models that ended up on our list had very little to no damage left after these tests.
Cleanliness
This section involved two tests: how easy they are to clean, and how much spillage occurs.
The first was the ease-of-cleaning test, where we also cooked eggs.
- We preheated the pans as normal (three minutes) and left each surface dry (without oil or butter).
- Each egg was placed and left until it burned.
- After taking out the burnt eggs and letting the pan cool down, we used a soft sponge (as recommended by manufacturers), warm water and a small amount of dishwashing liquid to clean them by hand for one minute.
The ones on our list cleaned like a dream, some taking a little bit more elbow grease, but in the end nowhere near as difficult as stainless steel alternatives.
For the leakage test, we used pumpkin seeds.
- We preheated the pans as normal (three minutes) and left each surface dry (without oil or butter).
- A handful of pumpkin seeds were placed inside.
- We rotated the pan in a circular motion, back and forth and side to side, to see if any seeds fell out.
None of the models on our list experienced spillage.
How to Maintain a Non-Stick Frying Pan
It’s always worth checking the instructions left by the manufacturer to understand how to care for the model you choose, although there are some general rules you can follow to lengthen its lifespan as much as possible.
- Never add cold water as soon as it comes off the stove. This can lead to thermal shock or warping, which will both cause damage and shorten its lifespan significantly.
- Before using it right out of the box, give it a wash by hand with warm soapy water and a soft cloth or sponge. This removes any residue that could be on top.
- Stay away from metal utensils and instead stick to silicone or wood ones.
- Use low and medium heat settings wherever possible, as constant bouts of extreme heat can begin to remove the non-stick properties.
